LAVENDER
There are 4 varieties of lavender on the farm; both French and English. We typically use English cultivars for drying and culinary purposes. Our French is distilled on site for a 100% pure essential oil.
In 2024, we will be adding a new cultivar; Munstead. That will not be ready for harvesting until 2025.
SAGE
Sage is a culinary and medicinal herb of the mint family that originated from the northern Mediterranean coast. The herb has a warm and musky scent.
Sage is used in culinary recipes; primary to season meat. Add flavor to veal, or use it for sausages, stuffing, and other meats.
Sage is also known for it’s antioxidant and anti-inflammatory benefits. Herbalists have used sage as a natural treatment for conditions such as swelling, sprains, and asthma.
ROSEMARY
Rosemary is a member of the mint family. It is a rich source of antioxidants and anti-inflammatory compounds.
Culinary uses of rosemary include seasoning meats such as chicken and lamb. It can be used as a dried herb or fresh herb in many recipes.
Health benefits have included use to alleviate muscle pain, improve memory, boost the circulatory system, and promote hair growth. The herb is a good source of iron, calcium, and vitamin B-6.
THYME
Thyme is also an herb in the mint family. It can be used both fresh or dried. Thyme retains its flavor when dried; better than a lot of other herbs.
In culinary dishes, thyme balances other flavors in a dish. It has a warm, aromatic flavor. This herb does not have to be permanently added to a recipe for it’s flavor. A sprig can be simmered until it releases its flavors into the liquid and then remove.
Medicinal uses include treatment for insomnia, healing cuts, natural eczema, and balancing hormones.
